Michelin Guide Gala 2023. This is how the night of the most coveted stars went.
On Tuesday, November 22nd, the 2023 Michelin Guide Gala for Spain and Portugal was held in Toledo. This charming and enigmatic city hosted the event for the first time, revealing all the Michelin-starred restaurants that will be included in this year’s prestigious guide. One of the most anticipated events in the gastronomic sector, it brought several surprises.
The 2023 Michelin Guide Star ceremony captivated everyone with its combination of in-person attendance and digital reach, allowing it to connect with the widest possible audience of food enthusiasts and viewers.
The number of restaurants with one, two, and three Michelin stars increased across all categories.
Gala Chefs and Special Awards
This year, the Michelin Guide introduced a new award for front-of-house service. José Vallés, head of the Michelin inspectors, confirmed this a few days ago, commenting that “this new award aims to highlight the importance of a team or restaurant manager.”
Three special awards were presented to the most talented professionals, a new feature at the 2023 Michelin Guide Gala:
- Young Chefs Award, for Cristóbal Muñoz, chef of the Ambivium Restaurant in Peñafiel.
- Chef Mentor Award, given to Joan Roca, chef of El Celler de Can Roca in Girona.
- Award for Dining Room Service, for Toni Gerez for his work as dining room manager and sommelier of Castell Peralada, in Peralada.
New three Michelin star restaurants 2023:
Two restaurants join the 11 establishments that hold this top recognition from the red guide, in which there were no changes in this category in 2022.
- Torres Brothers Kitchen. Sergio and Javier Torres, in Barcelona.
- Atrium. Toño Pérez, in Cáceres.

In this category there are three new additions compared to last year.
- Deessa. Quique Dacosta, in Madrid.
- Pepe Vieira. Xosé T. Cannas, in Pontevedra.
- Juan Carlos’s corner… Juan Carlos and Jonathan Padrón, in Adeje.
New restaurants with Michelin stars in 2023:
With 34 new restaurants, 5 of them in Portugal, the guide now includes 235 establishments, 24 more than in 2022. In Spain, they are distributed as follows:

Restaurants that lose their star
This year they will not receive the award, either due to a decision by the jury, a change in management, or the closure of the restaurant:
- Estany Clar (Cercs, Barcelona): pierde la distinción
- Trivio (Cuenca): pierde la distinción
- Mirador de Ulía (San Sebastián): pierde la distinción
- Cebo (Madrid): pierde la distinción, supresión por cambio de gestión
- Kabuki (Madrid): pierde la distinción
- eMe Be Garrote (Donostia, San Sebastián): supresión por cierre
- Auga e Sal (Santiago de Compostela): supresión por cierre
What does a Michelin star mean?
The Michelin Star is awarded based on criteria such as technique, service, value for money, and creativity. The guide is currently available in 30 countries. A team of Michelin inspectors anonymously sit down at the table and secretly evaluate the overall experience of each restaurant.
The 2023 Michelin Guide includes 1,401 restaurants in Spain, Portugal, and the Principality of Andorra. Among them are 13 with three Michelin Stars, 41 with two Stars, 235 with one Michelin Star, and 281 with a Bib Gourmand.
Bib Gourmand 2023
In this edition, this category has been reduced by three entries, going from 284 to 281 establishments. These are quality establishments that serve cuisine at reasonable prices.
The new Michelin Green Stars
The Michelin Guide Spain and Portugal 2023’s recognition of sustainability and commitment to the planet now includes 41 restaurants, with 3 new additions. This is complemented by 831 restaurants recommended for the quality of their cuisine, 134 of which are new entries, 15 of them in Portugal.
